Whole Fish in curry I can't believe I can rub a whole fish with the curry rub and some tomatoes in a baking dish and not have to do anything to it. The solution if you love fish like I do and can enjoy this festive dish at the end of a busy day.
Plan
- 2 tbsp = 20 g curry rub from Sorgh & Hoop
- fish of 400/500 grams like dorade, sea bass, trout or pieces of salmon
- 2 tomatoes or 200 ml coconut milk
- 2 tbsp oil
- 1 small onion
Prep
- Finely chop the tomato and onion.
- Make sure the fish has no scales and wash well, possibly with vinegar, on the inside and outside.
- Sprinkle the fish inside and out with oil and the curry rub. Rub it in nicely.
- Place in an oven dish with onion and tomato or coconut milk
Pleasure
- Preheat the oven to 200 degrees.
- Place the oven dish in the oven for 15 minutes.
- Turn the fish over and cook for another 15 minutes.
- Pepper to taste.
Psstt
- When working from home, I cover the dish with aluminum foil and cook the fish for 30 minutes at 200 degrees
- Roast some eggplant slices and possibly shrimp with the fish in the oven.
- Delicious with nan, wrap or rice chutney and stir fried veggie
